Sorbic acid is an unsaturated aliphatic straight-chain monocarboxylic fatty acid, 2,4-hexadienoic acid. Salts and esters form by reaction with the carboxyl group; reactions also occur via its conjugated double bond. The acid and its sodium, calcium and potassium salts are used in food.
